From haggis bon bons to burgers and steaks, George Street's newest bar and restaurant is in full bloom.
The team behind Edinburgh bars including The Boozy Cow and 99 Hanover Street, the Speratus Group have opened their newest venture Copper Blossom.
Serving up breakfast, lunch and dinner in its botanical themed lounge and restaurant, the venue offers the chance to kick back with a cocktail or recline with a roast.
Head of operations at The Speratus Group, Chris Baldwin, explained: "We are trying to bring something a little bit different to George Street.
"We started with a blank canvas so it's been a bit of a journey. We've been through quite a long process with this particular site and building over the last 21 months.
"It's somewhere that we wanted to be a flagship for our group. We were looking at something quite elegant and classic, somewhere you can come in and lounge and relax but somewhere you can get attentive and uniquely tailored service."
Enlisting the help of local artist Lynsey Jean Henderson, the bar features a variety of focal points including a giant outdoor floor mural.
"The designer described it as 'botanical' with the flowers around and it is probably the most feminine site we've done," Chris added.
From steamed mussels and quiche to beer battered haddock and burger and chips, the traditional grub has modern twists from its sauces to sides.
Light bites take the form of 'pick me ups' including black pudding scotch eggs, haggis bon bons and salt and pepper calamari while Sundays will see a special menu featuring brunch and Sunday roasts from 12 noon to 6pm.

From clear cocktails to DIY additions, the bar will use innovative machinery to clarify and infuse its drinks.
"We will have cocktails and recipes that have been around for 100 years but we will use techniques on one of the ingredients to modernise it a bit and present it or produce it in a way that customers might not have seen before," Chris said.
"We want to try to make it a little bit interesting and exciting."
Copper Blossom is now open at 107 George Street.
